Season salmon on both sides with lemon pepper.
Coat a large skillet over medium-high heat with a little olive oil; add garlic and salmon and cook for a total of 10 minutes per inch of thickness (measured at the thickest part) or until fish flakes easily when tested with a fork. Turn salmon halfway through cooking time to brown on both sides.
Arrange chopped spinach evenly on dinner plates; top with salmon and serve with lemon wedges.
