Pumpkin Chili

Ingredients
  

  • 1 28-oz. can crushed tomatoes
  • 1 14.5-oz. can pumpkin puree 14.5 ounce
  • 1 14.5-oz. can black beans drained
  • 1 14.5-oz. can kidney beans drained
  • 1 14.5-oz. can corn drained
  • 4 cloves garlic minced
  • 1 medium onion diced
  • 1 medium zucchini chopped
  • 2 medium sweet potatoes peeled and cubed
  • sea salt and freshly ground black pepper to taste
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons coconut oil

Instructions
 

  • Combine all ingredients in a slow cooker. Stir to combine, and cook on low for 7 to 8 hours. Adjust salt and pepper as necessary, then serve!
