Italian sausage and kale casserole

Ingredients
  

  • 2 1/2 tbsp olive oil
  • 1 small yellow onion diced
  • 1 large carrot diced
  • 1/2 lb cremini mushrooms thinly sliced
  • pinch salt
  • pinch black pepper
  • 1 lb italian sausage
  • 1 lb kale remove stems and leaves thinly sliced
  • 3 cloves garlic
  • 1 cup marinara sauce
  • 1/2 teaspoon dried oregano
  • 5 large eggs whisked
  • 1/4 cup paleo friendly pesto optional

Instructions
 

  • Preheat oven to 400 F. Heat a large skillet over medium-high heat.
