Preheat oven to 350 degrees.
In a small bowl, combine seasonings; rub mixture evenly over roast.
Place pork in a shallow pan and roast for 45 to 60 minutes or until a meat thermometer inserted in the center registers 155 degrees.
Meanwhile, prepare couscous. Remove roast from oven and let it rest for 10 minutes (temperature will rise about 5 degrees upon resting).
Slice and serve over couscous.
