Sausage Italian Wedding Soup

Ingredients
  

  • 1/3 pound lean Italian sausage sweet or hot, casings removed
  • 1 medium onion diced
  • 1 clove garlic pressed
  • 1 14.5-oz. can low sodium chicken broth
  • 2 small zucchini chopped
  • 2 1/2 cups chopped kale
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried marjoram
  • 1/2 teaspoon sea salt

Instructions
 

  • In a large heavy saucepan or Dutch oven, brown and break up sausage over medium-high heat.
  • Add onion and garlic; cook and stir until onion is soft, about 3 minutes. Add remaining ingredients.
  • Bring mixture to a boil then reduce heat and simmer for 8 to 10 minutes.

Notes

LC SERVING SUGGESTION: Top each serving with grated Romano cheese. Serve with a big salad of mixed baby greens, sliced red onion and halved cherry tomatoes tossed with red wine vinaigrette.
SERVING SUGGESTION: Add whole grain rolls and butter.KOSHER: Use turkey sausage.
GLUTEN-FREE: Make sure sausage and broth are gluten-free.
