Slow Cooker Sirloin Roast Au Jus

Ingredients
  

  • 1 teaspoon minced onion
  • 2 cloves garlic pressed
  • 10 ounces low sodium beef broth
  • 1 1/2 pounds beef sirloin tip roast trimmed
  • 6 ounces beer or additional beef broth

Instructions
 

  • In a slow cooker, combine onion, garlic and broth; add roast then pour beer (or additional broth) over the top.
  • Cover and cook on LOW for 8 to 10 hours. Divide roast among dinner plates and top with a spoonful of Au Jus.

Notes

LC SERVING SUGGESTION: Faux-Tay-Toes (steam cauliflower till tender; drain; mash with butter, cream cheese and salt and pepper to taste till you get a mashed potatoes texture). Add a big green salad on the side.
SERVING SUGGESTION: Serve French Dip Sandwiches (pile thinly sliced beef into lightly toasted, split French rolls and dip into Au Jus.
KOSHER: Make sure beef is certified kosher.
GLUTEN-FREE: Make sure broth and beer are gluten-free.
