Cook noodles according to package directions; drain then place in a large bowl and snip several times with kitchen shears.
In a medium bowl, combine gingerroot, five spice powder, and pork strips; add 1/4 teaspoon of salt and toss to coat.
Heat the oil in a large non-stick skillet over medium-high heat; add pork mixture and sauté for 2 minutes or until browned.
Stir in remaining salt, water, and hoisin sauce; cook for 2 minutes or until pork is done.
Add pork mixture and green onions to noodles; toss well to combine.
