Golden Squash Soup

Ingredients
  

  • 1 2/3 medium leek sliced
  • 2/3 Tablespoon butter
  • 1 1/3 cups chicken broth
  • 1/8 teaspoon dried thyme
  • 1/8 teaspoon pepper
  • 2/3 cup shredded cheddar cheese
  • 1/8 cup sour cream
  • 1/2 green onion thinly sliced

Instructions
 

  • Saute leeks in butter until tender. To slow cooker add leeks and next 4 ingredients (Squash thru pepper). Cover and cook on LOW 4 hours.
  • Stir to mash squash mixture, then add cheese and cook until melted. Garnish with sour cream and green onions.
