Drain cans of salmon and add to bowl. Mix together with crushed crackers, bread crumbs and diced onion. Beat egg with black pepper and add to salmon mixture and mix together well. Form patties and place in refridgerator to chill for 10 minutes. Heat olive oil in pan and add patties a few at a time. Brown on both sides and drain on paper towels.

Serve with sides of baked beans, corn and potatoes.
