Instructions
1 1/2 tablespoons chopped green bell pepper, 1 1/2 tablespoons chopped onion, 1 1/2 tablespoons tomato (seeded and chopped), 1/3 cup shredded low fat Cheddar cheese, 3 large egg whites (about 1/3 cup OR use an egg substitute), sea salt and freshly ground black pepper to taste. Cook veggies in a small skillet, add the eggs; cook until eggs are set and veggies are tender.
