Honey Mustard Salmon

Ingredients
  

  • 2 tablespoons olive oil
  • 1 1/2 tablespoons Dijon mustard
  • 1 1/2 tablespoons honey
  • 1 clove garlic minced
  • 3/4 cup bread crumbs
  • 2 tablespoons fresh parsley chopped
  • 1 teaspoon lemon zest
  • 2 tablespoons olive oil
  • 6 6-ounce salmon fillets
  • sea salt and freshly ground black pepper to taste
  • 1 large lemon cut into 6 wedges

Instructions
 

  • Preheat oven to 400 degrees.
  • Coat a 13 by 9-inch baking dish with olive oil and set aside. In a small bowl, whisk together mustard, honey and garlic.
  • In a shallow dish toss together bread crumbs, parsley and lemon zest and drizzle olive oil over mixture.
  • Take each piece of salmon and brush top with honey mustard mixture then transfer to bread crumb mixture. After all is coated transfer to baking dish and season with salt and pepper.
  • Bake in preheated oven 15 minutes until salmon has cooked through. Serve warm with lemon wedges.

Notes

SERVING SUGGESTION: Steamed asparagus and brown rice.
VEGETARIAN: Use eggplant instead of salmon fillets.
GLUTEN FREE: Make sure mustard and bread crumbs are gluten-free.
