Instructions
  1. In a large skillet over medium heat, heat coconut oil. To the oil, add the first 6 ingredients (shrimp through lime juice) and cook for 5 to 10 minutes, until shrimp is opaque and cooked through.
  2. In a food processor, pulse the cauliflower until cauliflower is a rice consistency if not using the prepared.
  3. In a large skillet over medium heat, heat olive oil. To the oil, add the cauliflower and cook for 3 to 5 minutes until tender.
  4. Serve shrimp over cauliflower rice and sprinkle with cilantro. Serve warm.
